Hummus fans, ....homemade is so much better!

Homemade pinto bean hummus, ...from dry beans! 

So easy, ...beans, garlic, onion, lemon juice and EVOO in a blender/food processor. It comes out to about 5 cents a serving. The batch I made this week, I used half for hummus, half for homemade baked beans. 

TIP: Process a batch of dry beans on the weekend to have for recipes throughout the week. When I have extra, I bag and freeze for soup. 

I do the "quick soak" and pre cook them as directed on the bag. I'll do a batch on the weekend (cup and half dry for just me) yields about 3 cups of beans for recipes for the week. This week I made homemade baked beans and a batch of hummus.

General Hummus Recipe (adjust to taste)

Place the following ingredients, one and a time into the blender/processor and blend in between adding ingredients.

  • Quarter of a small onion
  • Couple cloves of garlic
  • 1 -1/2 cup of pre-soaked and pre-cooked beans per bag instructions
  • 1 to 1-1/2 teaspoons of lemon juice (taste and adjust to taste)
  • 1 to 1-1/2 tablespoons of EVOO (extra virgin olive oil) drizzled in while blending
Taste and adjust as needed. A sprinkle or two of sugar can cut through the onion flavor if desired. Blend until desired consistency and smoothness.
